Colorado – Grilled Trout

The next state Team Thin Energy is lucky enough to race through is Colorado – the 8th largest state in the United States by total area. Colorado is a top destination for trout fishermen world-wide. Since the Greenback cutthroat trout is the state fish, we thought it was only appropriate to provide a recipe for grilled rainbow trout.

Per the 2020 Census, Colorado has a population of over 5.7 million people, with the capital city of Denver being the most populous. Along with Utah, Arizona, and New Mexico, Colorado is part of the Four Corners – the only spot in the U.S. where four states meet.

If you’ve ever visited, it should be no surprise that one of the largest parts of the state’s economy is tourism. We bet the incredibly vivid landscape is something the Race Across America teams will not take for granted, though we can’t imagine how difficult it must be to bike through that diverse terrain! Colorado encompasses most of the Southern Rocky Mountains, and one of the official state songs is the aptly named “Rocky Mountain High” by John Denver.

In addition to the mountains, there are so many stunning forests, deserts, canyons, plateaus, and rivers. Pro Tip: if you ever get the opportunity to drive through Colorado, make sure to drive with the windows down. The fresh smell from all those pine trees is absolutely heavenly.
