As the Race Across America kicks off in Oceanside, California, on Saturday, BBQ Outlets is proud to sponsor and support Team Thin Energy. The team is made up of cyclists Rahsaan Bahati, Alex Isaly, Rudy Napolitano, and James Cowan. They’re racing to raise awareness and funds for the Bahati Foundation – also out of southern California. The team has a live tracker on their site as well as a race map and more information about the Bahati Foundation. They’re also taking donations!
We are completely in awe of this team’s endurance as they complete this incredibly difficult and dangerous feat – racing over 3,000 miles from California all the way to Annapolis, Maryland in just over a week’s time. Since we can’t be there every step (pedal?!) of the way, we’re supporting in the best way we know how: sharing recipes! We’re posting signature dishes for each of the states our cyclists will be riding through, starting with California, in our BBQ Across America series.
We know people tend to think about vegetarian or vegan food when they think of California cuisine. We’re okay with that! In honor of our team who tends to eat plant-based or keto options, we have found a recipe for grilled veggie tacos. This light and fresh meal can be put together quickly on the grill. Take a look at the recipe we found over at Completely Delicious for some Grilled Veggie Tacos.
We’d love to know how your grilled veggie tacos turn out! You can share pics on Instagram or Twitter using the hashtag #BBQAcrossAmerica so we’re sure to see it. Tell us what your favorite part of the recipe was, and if there’s something you’d change, we’d love to hear your recommendations. We may even feature your picture on our own page (with your permission, of course!)
Great post. Thank you
